Plantains when cooked have around the same goodies nutritionally speaking as potatoes except plantains are higher in fiber and are richer in magnesium and potassium.

This vegan mango sushi is so good you wont even miss the fish (if that’s your thing). The mango texture gives this sushi recipe some fishy vibes without the fish! I love the tasty combination of the mango with the teryaki sauce! I chose to use brown rice to make my sushi a little healthier. It is harder to roll than traditional sushi rice, but I think it’s worth the extra effort. This dish is definitely healthy enough to be one of my weekly go-to meals. It’s quick, easy, fun, and a little different.
