Strawberry Sundae

It’s time to beat this insane summer heat with another delicious summertime treat! This vegan Strawberry Sundae is easy to make and will leave you saying... YUM! It’s not a true sundae without some whip cream and hot fudge! Lucky for you I also have a vegan recipe for both! If you are making this with the hot fudge and whipped cream then I would recommend making the hot fudge first, then the whipped cream, and the ice-cream last. This way everything will be assembled without racing against melting ice-cream. 

Strawberry Sundae

Ice cream Ingredients:

  1. 3 Bananas (cut into chunks and frozen)

  2. 2 cups of Frozen Strawberries

  3. 5 Fresh Strawberries (For topping)

Put the frozen strawberries and bananas into the blender, blend until smooth, and serve right away! If you don't have a really powerful blender, you might have to add a splash of almond milk or water to get things moving. Next, chop up your fresh strawberries for the topping and set aside.

Whipped Cream Ingredients: 

  1. 1 Can of Full Fat Coconut (refrigerated overnight)

  2. Sweetener of choice: I used 1/2 cup of baking stevia. Coconut sugar or agave would work great.

  3. 3-4 drops of vanilla extract

  4. Dash of Cinnamon

Refrigerate your canned coconut milk overnight. This will allow the coconut fat to separate from the liquid. Drain the liquid (you can save it to use later or toss it), and scrape the coconut fat into a bowl. Add your sweetener, cinnamon, and vanilla extract. Use an electric beater for 2-3 minutes to whip your coconut into whipped cream! Once all of the chunks are smoothed out, taste test your whipped cream and add sweetener if your taste buds desire. Place whipped cream in the fridge until you are ready to serve. 

Strawberry Sundae

Hot Fudge Ingredients:

  1. ½ cup coconut cream or canned full fat coconut milk

  2. ¼ cup unsweetened cocoa powder or raw cacao powder

  3. 2 tablespoons of pure maple syrup

  4. 2 tablespoons of organic coconut oil

Melt the coconut cream, cacao/cocoa powder and maple syrup on low heat over the stove for about 2 minutes until it’s smooth and creamy. Turn the heat off and stir the coconut oil into the mixture until it’s shiny and smooth. Let it cool while you make your whipped cream, and ice-cream.

Once all three recipes are made it is time to assemble your Strawberry Sundae! Start with a few scoops of your ice-cream base, followed by a heaping spoonful of whipped cream. Next add your fresh chopped strawberries on top, then drizzle your hot fudge all over!
