Vegan Chia Seed Pudding

Chia Seeds are one of my favorite super foods!

Seriously if you are not using these you are missing out!

My favorite ways to use them?
1. Mix it in with:

  • Overnight oatmeal
  • Smoothies
  • Quinoa
  • Salads

2. Use as an egg replacement in baked goods.

3. Chia pudding! The ultimate super food dessert! It can be fruity or chocolaty. Either way it is DELISH. Recipe below.

Vegan Chia Seed Pudding:

1 Cup Milk of Choice (I use almond milk)

1/4 Cup Chia Seeds

1/4 Teaspoon Vanilla Extract

Sweetener Options: Stevia, Honey, Coconut sugar (I use a few drops of liquid stevia)

Customize!! Add your favorite fruits or toppings! My favorites include: Raspberries, bananas, shredded coconut, granola, almonds, and hemp seeds. Mix up ingredients and let it sit in the fridge for a few hours. Pudding will come out to be tapioca texture. Add more milk for a thinner consistency. YUM

“In terms of nutritional content, a tablespoon of chia is like a smoothie made from salmon, spinach, and human growth hormone. As tiny as those seeds are, they’re superpacked with Omega-3s, protein, calcium, iron, zinc, fiber and antioxidants. If you had to pick just one desert-island food, you couldn’t do much better than chia, at least if you were interested in building muscle, lowering cholesterol, and reducing your risk of heart disease; after a few months on the chia diet, you could probably swim home.” – Born to Run, Christopher McDougall

I was stoked when mama chia sent me a goodie box. Their blueberry chia granola is to die for! If you’re looking for superfood to go snacks then check them out!
