Let me begin by saying that I'm convinced cauliflower is magical.
Think about it. There's no way that one food could taste so delicious in so many different ways. Roasted, air-fried, in salads, and even (like this recipe) in tacos, cauliflower goes well with anything as long as it's prepared correctly.
Okay, okay. Even if you don't believe that cauliflower is magical, these tacos will still blow your mind. They combine some of my favorite things; avocado, buffalo sauce, and leafy greens, in a way that will never let you go back to traditional tacos again.
Ingredients (for cauliflower):
- 1/2 of a cauliflower head
- 4 tsp. olive oil
- 1 tsp. garlic powder
- 1 tsp. chili powder
- 3/4 cup buffalo sauce
Ingredients (for tacos):
- Flour torillas
- Romaine lettuce
- 1 avocado
- Vegan ranch
Preheat the oven to 425 degrees and cover a baking sheet in foil to cook the cauliflower on. Break apart the cauliflower into bite-sized pieces and cover in the olive oil, garlic powder, chili powder, and 1/4 of the buffalo sauce, then pop into the oven to roast for 20 minutes (flipping them over halfway).
Once the cauliflower is done, coat it in the rest of the buffalo sauce. Put the lettuce and avocado in the tacos, followed by the roasted cauliflower. Top it with cilantro and vegan ranch, or whatever other goodies you think will go well with this recipe. Green onions or even more buffalo sauce are just a few ideas!
