These gluten-free/vegan blueberries muffins are a great healthy alternative to traditional muffins. They only require one bowl (which I love because it makes cleaning up SO much easier). Also, I use coconut sugar as the sweetener because coconut sugar is low glycemic and guilt free!
If you’ve been reading my blogs, you know that for the last thirty days I’ve been eating as clean as possible. I was already vegan, but in order to try and lead a healthier lifestyle I cut out lots of processed foods and, more importantly, gluten. Today is the first day of my gluten free and no processed foods journey. I usually eat pretty clean but the last few weeks I have been indulging in sweet treats and unhealthy meals. It always leaves me feeling like crap. So I decided to go 30 days eating super clean to get back to my "normal" clean eating ways. The goal is to feel awesome all the time and eating clean definitely makes me feel awesome.
