Super Easy Baked Sweet Potato Fries

Healthy Sweet Potato Fries

If I go out to eat and the restaurant has sweet potato fries, you know what I'm ordering, no hesitation. I don't know why any place that serves regular fries wouldn't also serve sweet potato fries; they're so much better, and can be enjoyed in so many different ways (desert fries, lots of yummy stuff on top, etc). However, I rather make them at home because I can make them so much healthier! 

If you read my blog on cinnamon rolls, you know how obsessed I am with cinnamon. It's great for your metabolism and immune system in general, and it tastes amazing, so I put it on as much stuff as I can. These fries are no different! Cinnamon and salt on the fries complement their savory flavor, but bring out my favorite part- the sweet!


Healthy Sweet Potato Fries

1. 2 Medium sized sweet potatoes

2. 2 Tbs coconut oil

3. Cinnamon to taste

4. Salt and pepper to taste 

Preheat the oven to 400 degrees, and cut up the potatoes into french-fry sized pieces (about a centimeter thick). If you're having trouble cutting them, just soften them in the microwave for about 45 seconds, let cool, and then cut. Toss the sticks in the melted coconut oil and a tablespoon of cinnamon, and lay them out on a pan to bake. Leave them in the oven for 30 minutes, flip, and then bake for another 10-15 on the other side. Then simply remove them from the oven, sprinkle with as much salt and cinnamon as your heart desires, and enjoy! I like eating them with a mix of vegan mayo and sriracha for an added kick, but they taste just as good on their own.
