Raw Vegan Banana Pudding

I am a little bit obsessed with bananas.  I put them in smoothies, oatmeal, desserts, and always eat them as a snack.  I created this yummy Raw Vegan Banana Pudding recipe as a healthy alternative to the sugary “bad for you” banana pudding.

Ingredients:

1 Avocado

3 Large Ripe Bananas

1 Can Full Fat Coconut Milk

4 TB Maple Syrup (or any sweetener)

2 TBS Vanilla Extract

Dash of salt

Directions:

Place coconut milk in the refrigerator overnight or for at least 3 hours. This lets the coconut fat separate from the liquid.  Scoop out the coconut fat into the food processor, you can save the milk for later or toss it. Place all ingredients in the food processor (or blender). Blend until smooth!

This made about 4 cups worth of pudding. Your amount may vary depending on the size of the fruit you use.
