This lemon cashew cookie recipe is meant to be a no bake recipe, similar to protein bars. These vegan cookies are SO good but also super healthy! They are high in plant based protein and designed to be the perfect energizing snack.
1 Cup of Almonds
1 Cup of Cashews
1/2 Cup Vanilla Protein Powder (I use Ideal Raw)
8 Pitted Dates
4 Tbs of Lemon
Optional Stevia to taste
Optional Sea Salt to taste
In a food processor, pulse all ingredients and blend until your reach the desired texture. For a smooth cookie process longer and for a crunchier cookie process less. If you like a stronger lemon flavor then add more lemon juice.
Scoop out mixture from the food processor and place on a clean non-stick surface.
Shape the mixture with your hands into 1 inch balls. Then gently flatten the balls into a cookie shape.
