Easy Vegan Grilled Kabobs

Summer is officially here! Or, at least, the heat is. Either way, it's the perfect time to fire up the grill and start cooking all sorts of summer foods.

One of my favorite dishes, and perhaps one of the easiest to cook, are kabobs. They're packed with tons of flavor, super customizable, and great as a side or as the main course. I love to use them as a way to eat all my favorite veggies quickly and easily before I have to run off and do something, but they're also super easy to make a large amount of at once; perfect for parties!


  1. Various colors of bell peppers 
  2. One potato
  3. One onion
  4. Squash
  5. Tomatoes
  6. Literally any other vegetable your heart desires
  7. 1/3 cup Olive oil (or Coconut oil)
  8. 1/2 teaspoon dried oregano
  9. Three cloves garlic
  10. Salt and pepper, to taste

Okay, so the ingredients list up until seven is more of a "suggestions list" if we're being honest. I switch it up from cookout to cookout, depending on what I have at home and what I want to eat. I'll let you in on a little secret; pretty much any vegetable tastes good grilled.


Put whatever you want on a kabob skewer, then coat in the olive oil. Sprinkle oregano, garlic, salt, and pepper on, turning the kabobs to make sure they are evenly coated. Then simply put them on the grill on medium heat, and cook until you think they're done. I personally like them charred and crispy, but my brother likes them super soft. However you choose, they're going to taste amazing!
