Summer is coming, and along with it an iconic staple of summer; ice cream. Kids in the neighborhood chase after the tune of ice cream trucks, and for a good reason. It's the perfect treat on a stifling hot summer day.
But what about when you're vegan?
There are lots of mass-produced vegan alternatives in grocery stores, but they're often overpriced for very little product. Over the years I've tried lots of homemade recipes to try and remedy this, and none have worked as well as a little thing called "nice cream."
Nice cream is a banana-based vegan ice cream. Basically, if you have frozen bananas, a blender, and something you think would go well as toppings, you have nice cream. It's quick, easy, cheap, and one of my favorite things to treat myself to while lounging by the pool.
Cut up the banana and put it in a plastic bag in the freezer. I like to cut up the bananas that are about to go bad and put them in the freezer preemptively; brown bananas are better for this because they're sweeter, and you never know when the urge is going to strike to make this dish.
Once the pieces are frozen, place them in a blender, along with the coconut milk and cocoa powder. Blend until smooth, and then add in crushed pieces of the Oreo cookies, blending some more.
Once it's smooth enough, enjoy! Often times it will be thick enough immediately after blending, but if you want it to be more like the consistency of real ice cream, leave it in the freezer for two hours.
Top it with more Oreo crumbles, and enjoy! This "nice cream" recipe is perfect for the first sweltering summer day that comes up, or for whenever you're craving something sweet that still is packed with lots of nutrition!
