5 Gluten-free Breakfast Ideas

If you’ve been reading my blogs, you know that for the last thirty days I’ve been eating as clean as possible. I was already vegan, but in order to try and lead a healthier lifestyle I cut out lots of processed foods and, more importantly, gluten. (If you want to read more about this journey or find out how to do it yourself, go read my last blog post, “30 Days Clean Eating”).

I’m not going to lie. Eating this clean, while very rewarding, has also been very difficult. One of the things that makes it easier though is waking up every morning and starting the day off right with a delicious and healthy meal. It makes my body happy, gives my mind a boost, and gives me enough energy to power through all the things I have to do in the day (until the next meal, of course). In order to help you guys enjoy breakfast as much as I do, I’ve compiled a list of five of the meals that have been some of my recent favorites. 1. Fresh fruit

I love fresh fruit, it’s so easy to prepare and good for you, but it’s also yummy! The first recipe is just literally a bowl of fruit. There are so many to choose from, but a few of my favorites are blueberries, raspberries, bananas, and grapes. It takes less than a few minutes to prepare, but it’s one of my favorite breakfasts.

2. Blueberry Muffin

Considering how much I love fresh fruit, like blueberries, it makes sense that the next recipe is a classic blueberry muffin. Eating vegan and gluten free doesn’t mean you necessarily have to give up all the foods you enjoy, and this is the perfect example of that! In order to make it vegan, just substitute in almond milk instead of actual milk (Click here to get the recipe).

3. Vegan chocolate chip pancakes

3. If you love sweets, this recipe for vegan chocolate chip pancakes is for you. They’re light and fluffy, and it’s hard to stop at just a few! If you want to follow the trend of the last couple recipes, add fresh fruit! My personal favorite with these pancakes is bananas, but strawberries would make a fantastic addition too (Click here to get the recipe).

4. Tofu scramble

Okay, okay, I get that a person can only take a certain amount of fruit for breakfast. This recipe for tofu scramble adds a little savory flavor to your morning routine and has lot of protein to give you a high boost of energy for a tough day (click here to get the recipe).

5. Pitaya smoothie bowl

Finally, the last recipe is a smoothie bowl, ideal for a day when you have to bolt out the door and just need to grab something to eat on the go. It tastes delicious, it looks very pretty, and you can even make them ahead of time and just throw them in the refrigerator so it’s even less prep time in the morning.
